Chicken and Black Bean Soup
Even my kids enthusiastically eat this (sometimes with a little cheddar shredded on top).
about 8 servings of 1 cup each - 175 calories, 2 g fat, .4 g sat fat, 21.9 g carbs, 3 grams fiber, 19 g protien

2 cans black beans rinsed
1 cup mild salsa
2 cups prepared chicken boulion or broth
2/3 cup frozen corn
1 lb. cooked and cubed chicken breast
1/2 tsp salt
2 Tbls. cumin

Puree beans, salsa and bullion until desired consistency.  Add this mixture along with other ingredients to crock pot and heat on low until warm.  Also can be heated in pan on stove if you prefer.  For a great nutritional boost and fewer calories per cup consider adding chopped red peppers, green peppers, and onions to the soup.  You may want to saute these in a little broth first so they cook completely unless you have all day for them to cook in the crock pot.  If you are a cheese freak, as I am, and your day can handle a little added saturated fat and calories, try some feta on top.  Yum!
